Jane’s Kitchen: Chocolate Zucchini Cake

Servings: 24 

 

2 cups flour 

2 cups sugar 

3/4 cup unsweetened cocoa powder 

2 teaspoons baking soda 

1 teaspoon baking powder 

1/2 teaspoon salt 

1 teaspoon cinnamon 

4 eggs 

1 1/2 cups oil 

3 cups grated zucchini 

3/4 cup walnuts, chopped 

 

Preheat oven to 350 degrees F. Grease and flour 9″ x 13″ pan. 

Stir together all dry ingredients. 

Add eggs and oil and mix well. 

Add zucchini and walnuts and fold in until they are well distributed. 

Pour into prepared pan. 

Bake 50-60 minutes until cake tests done. 

Sprinkle with powdered sugar or frost when cool.
